Warm quinoa and shiitake salad.


This is one of my new favorite dinners. It's shiitake mushrooms grilled with a red wine vinaigrette tossed in a salad of warm quinoa, spinach, and feta cheese cubes. So very good-soft, delicate flavors, kind of salty, mushrooms are a little chewy and smoky. Have I mentioned lately that Kelly is a magician in the kitchen?
