Don’t Eat All the Avocado

Written by kelly on August 16th, 2011

Something you may or may not already know about me is that I really like avocado. When I had my wisdom teeth removed the summer before sophomore year of college, I mostly ate avocado (with Johnny’s Seasoning Salt, the way God intended), while I awaited the green light for regular foods. I like avocado with pretty much anything, but mostly alone with a little salt. Tonight’s dinner was delicious; I’ll admit that the trickiest part of preparing the meal was making sure I didn’t eat the avocado before it had a chance to be introduced to the other ingredients, but it was worth it!

Here’s a photo of the end result:

Perfect summer treat

It’s a great summer meal! No need to turn on the oven and you could really prepare the ingredients in advance. You should know I used this recipe, but failed to read the directions in their entirety prior to chopping and mixing up the dressing portion. No worries if this happens to you. It was still delicious without cooking the ingredients, though I think heating them might marry them a little more. Ours was a little too limey for my taste. This is easily remedied with an extra dash or two of cumin. Oh, I’m also too lazy to shuck corn unless I’m eating it off the cob with my teeth. I used frozen corn.

Also, Beatrice is now old enough to wear the little apron I wore when I was young. I love it! She did help by holding the sieve so I could rinse the quinoa, but she decided she would make a batch of scrambled eggs for herself while I was doing the boring bit of cooking the quinoa.

20 Days

Written by kelly on August 15th, 2011

Did it ever happen to you in college or high school or heck, even in the real world, that you have a project/job/blog that you like and then it’s been a week or so and you haven’t worked on it and now it seems so large and looming that it’s impossible to get started? Yeah, that’s what this blog break has been about. That, and I just finished reading Bossypants, which was well worth my time. I’m sorry we’re terrible at blogging in the summer. There’s just much to do around here during the summer and it stays light so late that I cannot be bothered to blog, but I have probably read your blog if you have one….

Beatrice is now walking. I like to call her Toddlepants these days. She giggles when I call her that, so I’ll assume she likes it too!

We went camping two weekends in a row and hosted guests during the week between and the week after. Beatrice stopped sleeping through the night. It was very sad. We’re back on track these days and I’m happy to report that the sleep is sweet!

We are currently waging war on the worst diaper rash I have ever seen. (Too much info? Sorry.) It’s just bad and as such, I’m changing diapers every 90 minutes. Insanity. Also, this means I’m washing diapers every 36 hours. Insanity.

Most of you are friends with us on facebook, which means you’ve seen 90% of our photos already. It seems like a duplication of our efforts for me to write up a blog post about them. However, this week will be the week of blog posts my friends. Consider yourselves warned.

There you have it. Fun with friends, camping, being outside, enjoying family fun. Basically anything but spending time on the computer. That’s okay.

Splash Park

Written by kelly on July 14th, 2011

One of our local parks has a little splash park area for children and Beatrice and I went to check it out last week. I wasn’t sure how she would respond to the water splashing, and she did stay close by my side for the first few minutes or so.

Sticking close to Momma

Once she caught on, this is what I saw:

Splashy! Splashy!

So nice!

Brave girl!

The splash park was a fun way to cool down with some friends and just the right amount of time to guarantee a nearly four hour nap that afternoon!

July 13-Five Years!

Written by kelly on July 13th, 2011

Five years ago today, I had one of the most hectic, wonderful days I can remember. I got to work early, skipped lunch and left at 1:00 to be in Bellevue for an interview for a job I wished so very much to have! After the interview, I was meant to meet Jonathan at his apartment, but I was early so I just sort of wandered around town for a bit. I got to Jonathan’s place and he asks if I’d like to have dinner first or go for a walk. Mind you, I hadn’t eaten since about 5:30 and I was wearing a suit! Because I really liked Jonathan, I said, “Oh, up to you!” He decided we’d take a walk first, so I put on my walking shoes and off we went. My stomach was rumbling, but I was also out-of-my-mind nervous! Here I was, off to walk with this guy I liked SO MUCH. I didn’t care if we ate at all!

We walked along the Sammamish River Trail, talked about things and then, well my friends, it was the most magical event I’d ever experienced. We HELD HANDS. And it was mind-blowing. I was holding hands with the most amazing, wonderful guy I’ve ever known AND he had expressed his intentions perfectly clearly. I was not worried about having my heart broken, I was overwhelmed with joy that the Lord had so perfectly orchestrated everything for us.

Here is one of our first photos together (I’m definitely wearing a dress. It’s just strapless):

Because today is the five year anniversary of our hand-holding life together, I’ve been thinking quite a bit about holding hands. Jonathan not only held my hand that day as we were walking along the trail, he’s held my hand as he asked me to marry him, while I faced a scary health crisis during our dating days, as we walked back down the aisle as husband and wife, as we traveled to other countries, just sitting on the couch at home, driving in the car, as we sat with our doctor and heard the news about our sweet girl’s life being in danger, while I breathed through contractions, as he held Beatrice during her first days of life. There has been MUCH hand-holding in the last five years and not all of those times have been moments of rejoicing, but I have always been thankful to have Jonathan right by my side.

First Spider

Written by kelly on July 12th, 2011

This isn’t a first that many folks would recognize/record, but I thought it was delightful!

Wednesday evening, I was preparing to head out for a run/jog and we were enjoying a little family fun in the backyard prior to my departure. I noticed a spider and pointed it out to Beatrice who watched with interest, but stayed at a distance. She said, “night night spider!” when it had crawled back into the grass. Dear Bea, I sure hope you don’t fear bugs!

First Trip to the Zoo

Written by kelly on July 11th, 2011

Last weekend, we enjoyed our first family trip to the zoo! We went with four other families from our parent-baby group through the hospital and it was such fun.

The first exhibit we saw was the penguins. Beatrice really liked watching the penguins and was simply delighted with the whole experience. When it came time for us to move on to the next stop, she screamed and kicked and cried! We tried explaining to her that there was more to see, but she just said, “More penguins! More penguins!” and kicked and cried some more.  All the other children in our group were obediently going with their parents to the next exhibit and our child was throwing  a huge tantrum. It was a stressful start! Our next stop was a screaming bird which was frankly terrifying! However, Beatrice was pleased that we were seeing more birds, so it wasn’t terrible. We quickly moved on to the flamingos!

Bird lover!

She really likes animals and I think her favorite parts were the birds, ducks, farm animals and the giraffe. She also liked the monkeys, but there was a crowd so Jonathan took her “in” to watch them while I stayed with the stroller, so I couldn’t really see her reaction that easily.

Bea and Momma and the elephant rear

At the elephants, she got really excited! She was so happy that she was trying to throw herself into the elephant area! Naturally, this was terrifying for me, so I held onto her as tightly as I could. If you’ve ever tried to hold tight to a toddler, you know that this is a sure-fire way to cause anger and tears. We recovered quickly and realized it was time for a snack for everyone!

We love the zoo!

After snacking, the children played around in the grass a bit:

One of these things is not like the other!

Then we knew it was almost nap time, so we headed to the carousel for some fun before we drove home. Clearly, I took this photo, which is why it’s blurry. You know what? I still love it! Look at those faces:

Guest Blog Post at HBH

Written by kelly on June 24th, 2011

Happy Friday Friends!

Today, we are the guest bloggers over at Homewares by Hand .  We made gelato in celebration of Jessica’s trip to Italy.

Please know that we do not usually make ice cream/gelato at 7am. It’s just how things turn out around here sometimes.

Since it would be cruel to write a post without a little photo of our girl, here she is playing with some toys at the TotSpot Cafe last week:

Beatrice is 15 Months Old

Written by kelly on June 19th, 2011

After her first birthday, we decided to stop taking monthly photos of our girl. Mostly, it’s because she won’t sit still for a photo anymore! As this is sort of a family record blog, I will post every few months (quarterly) so we can make sure we have things written down for our own sake.

Beatrice, you are now 15 months old. You move all of the time. Most of the photos I take of you these days are when you are in your high chair because this is the only time you sit still. I wouldn’t change it for a minute!  At 15 months old, you are not yet walking, but you like to stand when I say “ta da!” and you put your hands in the air and either shake them or clap. It’s adorable. You also say, “Yay Bea!” an awful lot. I think this might be due to the fact that we started celebrating each time you picked the easy way (not squirming) when we put you into your car seat by saying “yay Bea!” now you do it when you finish a meal, read a book, pretty much all the time. I’m not so secretly hoping you’ll be a cheerleader when you get older.

Tada!

You really enjoy being around other children. This week, we went to an indoor play time and when we walked in the door, you were so excited and happy, you started shaking and yelling, “Children! Momma! Children! Play? Play? Play!” You were shy at first when we got to the play area, but a kind older boy showed you some trains with smiles on them (from a Thomas the Train set) and it made you very happy. He was clearly a train expert and helped you play at the train table. Another little boy showed you some dinosaurs and let you play with a t-rex. One of my favorite parts of our experience was watching you with the trains. You found each of the green trains and collected them together in a little piece of the train track that had a bridge. Then you were upset when another child wanted to use those train pieces on the track! Oh, be still my little organizing heart!

You still love books and have gotten to the point where you fill in a word in the sentences of the book. You do the same thing for songs. This weekend, Daddy taught you Twinkle Twinkle Little Star and you sang star, are, high, sky and it just tickled you pink! It makes us smile too.

You wake up hungry! Sometimes, you have a little temper if we don’t have your breakfast right away. We’re starting to teach you about other people’s feelings and how yelling doesn’t make things cook faster. You’re such a compassionate little soul, we are careful to explain to you how your actions make others feel while still trying to keep you from being too upset. I think you’re starting to catch on, but I know this will be a life-long learning situation.

It has been rainy here, so we took a little trip to the store and purchased a couple new items: a puzzle and some special markers for you. You really enjoy coloring! Sometimes, you just want to take off the cap and put it back on and other times you will color for quite a long time. You like it when Momma or Daddy draw you ducks or Mickey Mouse or smiles. So far, your coloring has mostly just been an exercise in getting color to appear on white paper, but you have started saying the name of the item you’re drawing so we know it’s not long before we’re trying to figure out if you’ve drawn a snake or a robot!

Beatrice, you just get more fun each day! What a blessing it is to be your Momma and Daddy! We love you!
