Thirty, flirty and thriving

Okay, probably not flirty. Definitely not flirty now that I think of it, but I am thirty. Thirty years ago, my dad was sunburned from standing out in the sun waiting for the Seattle Supersonics to return home after winning the national title, my mom was looking beautiful as ever on the day of my arrival and a slew of people were standing around Auburn General waiting to meet me. I don’t remember anything about that day, but my parents sure remember it. For some reason, turning thirty has seemed bigger than turning twenty. Don’t get me wrong, my twenties were great! In fact, here are some of the milestones I’ve been thinking of lately from my twenties, in no particular order:

  • Graduated from college
  • Met some of my best friends
  • Worked at CAMP!
  • Picked out my very own (used) car from a car dealership
  • Drove across the country by myself
  • Got a job that provided things like medical insurance and retirement
  • Learned that I can enjoy a glass of wine without mixing it with apple juice
  • Said good-bye to my Grandma Bea for the very last time (this makes me tear up just to write. She’s not sad, don’t you worry, she’s in the very presence of Jesus right now and she’s forgotten all about what it means to be sad)
  • Met Jonathan who is my HUSBAND!!!! (What? I know! I never thought I’d be married either!)
  • Traveled and gotten to see some amazing stuff: that piece of art that looks like a giant spoon with a cherry in the Twin Cities, garden of the gods in Colorado, the Alamo, the ruins at Tulum, the Prime Meridian, plantation homes in South Carolina, The Huntington in California, the Cotswolds, Graceland, Elvis’ birthplace in Tupelo, MS, replica “little mermaid” sculpture in Elkhorn, IA (oh wait, that was me), the Montana sky at night, elephants in South Africa, visited our nation’s capital, several state capitals and some other random sweet points of interest.
  • Learned to like coffee that doesn’t taste like a sundae
  • Started to like wearing make-up. Even more, learned to like myself when I’m not wearing it.
  • Had the best first kiss EVER (again, Jonathan is amazing)
  • Hosted Thanksgiving dinner (my favorite holiday!)
  • Grew more in my faith than I would have ever expected-questioned, pondered and struggled to get there, but grew incredibly.

Goodbye twenties! You were nice, but I have a feeling this new decade is going to be just as wonderful!

Yesterday, I was considering cutting out junk food in my thirties, but now I’m thinking that can wait. Who doesn’t like chips and queso every now and again?

Little Erik, the youngest of the Ron and Linda Eskesen children, is 22 today! Woohoo!

Erik, we are oh so happy to celebrate your birthday with you and very proud of the man you are and the friend you’ve been to us at all times!

Happy Birthday Dad!

Today is my dad’s birthday. Happy Birthday! I hope you get to do something fun, like consume a pile of steak! I’m sure glad you’re my father and not some lame-o loser.

Birthday Dinner

For Jonathan’s birthday, he asked me to cook up a new recipe for dinner (we had already gone out to eat the previous two evenings and we like to keep things balanced). I offered up a selection from the various cookbooks and magazines we’ve got around the house and this is what he selected. (From Real Simple, November 2008) I did not really change much on this, but I did use salmon with the skin because I wasn’t paying attention. Not such a big deal. It was delicious!

Salmon and Fennel with Roasted-Lemon Vinaigrette


2 bulbs fennel, thinly sliced
2 lemons, cut in half crosswise
4 cloves garlic, unpeeled
3 tablespoons olive oil
Kosher salt and black pepper
4 6-ounce pieces skinless salmon fillet
1 teaspoon honey
1 teaspoon chopped fresh rosemary
12 ounces mixed greens (about 8 cups)

Heat oven to 400° F. In a large roasting pan, toss the fennel, lemons, garlic, 1 tablespoon of the oil, and 1/4 teaspoon each salt and pepper. Roast until the fennel begins to soften, about 8 minutes.Yield: Makes 4 servings NUTRITION PER SERVING
CALORIES 372; FAT 17g (sat 2g); CHOLESTEROL 97mg; CARBOHYDRATE 17g; CALORIES FROM FAT 40%; SODIUM 696mg; PROTEIN 40g; FIBER 6g; SUGAR 4g

Season the salmon with 1/2 teaspoon salt and 1/4 teaspoon pepper and nestle in the fennel. Roast until the salmon is opaque throughout, 12 to 15 minutes.

Squeeze the garlic out of the skins into a small bowl and mash to a paste. Squeeze the lemon pulp and juice into the bowl. Stir in the honey, rosemary, the remaining 2 tablespoons of oil, and 1/4 teaspoon salt. Place the salmon and fennel on the greens. Drizzle with the dressing.

Happy Birthday to two great folks: Brian Spence and Carrie Sibold (the 19th of April).

Brian is a friend I met oh, about five and a half years ago through another friend. He’s a great guy who has been great support and a good cheerleader when I’ve needed someone to tell me things like, “It’s going to be okay. It really will” and when I didn’t want to date anyone, he encouraged with things like, “I think Jonathan might be different” and for that I am very grateful. Brian is currently livin’ it up in Guatemala for a bit. We’re praying for you and little Kobe, Brian! May this be your best year yet!

Carrie is also celebrating the day of her birth on the 19th! Carrie and I met in 2002 as well, in the front office off Okoboji Lutheran Bible Camp, when she was the Summer Program Director and I was a terrified first year counselor. Carrie kindly showed me to my cabin, helped me pick the best bed, set up my bedding and then introduced me to other folks so I wouldn’t feel so alone. She’s been a tremendous friend and I am very thankful the Lord brought us together in Iowa. In 2005, Carrie moved out to Seattle and we lived it up in Kirkland for a bit, then beautiful Renton and then in Bellevue until last year when she became a grown up and moved into a condo she bought for her very own. She gets to marry Dan Potter in September and he’s a pretty swell guy. We’re VERY excited for him to be part of our fun and festivities in the coming years!

Thank you for being the friend who loves my family, who is willing to tell me when I’m wrong, to hold my hand and pray with me when I’m hurt, to know the secrets about presents for Jonathan, to laugh at my silliness and be a little silly yourself and always, always be available if I need you. God has really blessed me with a friend like you.

Happy, Happy Birthday to Christi! (Christi was my roommate until January, when I moved out for Jonathan, the world’s most permanent roommate….heehee.)
