
Kelly made this salad for us a few days ago and it was DELICIOUS! The recipe is from Real Simple but doesn’t appear to be on their website. No matter; here’s what’s in it:
- Poached salmon
- Arugula
- Shredded beets (we used a food processor)
- A dressing made of horseradish, sour cream, and dill
That’s about it. It’s healthy and it’s a great way to get some beets in your vegetable mix; they add a slightly sweet counterpoint to the nutty arugula and are a great texture complement to the soft salmon.

Or you can just go to the “Magazine and More” tab on their webpage and search this month’s features under satisfying salads or something. It’s called Poached Salmon Salad with Beets. We did not have fresh dill so I substituted with dried dill and I put the dill into the dressing rather than having it sprinkled over the whole dish. And yes, because I’m lazy and did not want to slice a beet with a veggie peeler, I shredded it.

Too bad I don’t like 1.salmon 2. beets 3. arugula. Wait. What is arugula? But I still don’t like beets or salmon. The pictures are beautiful, though.
